It's starting to feel more like fall, and I've noticed that my body is naturally shifting from the light cool foods of summer to the more heavy, hardy, warm foods of fall and winter. And of course, I'm eating lots and lots of apples.
When I have an abundance of apples my go to dishes are always apple crisp, apple pie, and apple sauce. Lately, I've wanted to find more interesting ways to incorporate apples into meals while they are still in season. In my search for the perfect meal, I stumbled across Apple Pumpkin Risotto, and boy was it delicious.
Since apples, apple cider, and pumpkins are all in season, if you play your cards right, you can end up with a gourmet meal at a reasonable budget friendly price. I topped the meal off with some steamed spinach and butternut squash, which I also found for dirt cheap prices at a local farm store.
As a side note, if you don't feel like adding an extra 45 minutes to an hour of prep work making homemade pumpkin puree, a can of puree will work just as well.
Also, when initially cooking the risotto, this recipe suggests pouring the full 2 cups of water into the dish and waiting till the rice absorbs it all. I like to slowly add the water in, but that's up to you.
